Why A2 Desi Ghee Is Better Than Regular Ghee

Desi ghee made through the traditional bilona process is fundamentally different from commercial ghee. Instead of churning cream directly, the bilona method starts with curd made from whole milk, which is then churned to extract butter. This butter is slowly simmered to produce ghee.
Why does this matter? The bilona process preserves the fat-soluble vitamins (A, D, E, K2) and butyric acid that support gut health, immunity and brain function. A2 ghee from native Indian cows like Gir and Sahiwal contains the A2 beta-casein protein, which is easier to digest than the A1 variant found in most commercial dairy.
